Kale is a yankee green. No in the south ever thought of eating the salad bar decoration, now the yuppies in the city started when it randomly got popular. Now they supposedly eat it because it's healthy.....Uhhh....Mustards, Turnips, Collars are healthier and infinitely better tasting.

Definitely worth doing, especially getting that fat to begin to render out and get smokey.
It's ok sometimes. My wife makes a pretty good kale slaw and it's perfectly fine in a soup.
