LOL. I got a cheese-making kit for Christmas, from the wife.
Mozzarella is easy. Gallon of milk, a little citric acid, a little rennet, a little salt and some temperature control, and I had a pretty damn good cheese.
Hard cheeses will be... well, harder. But the Mozzarella only took me about 45 minutes.

That is one of the easier ones from what I've seen. I think I saw a cooking show do it and I thought to myself that I could do that. In Southern Living there was a list of camps and things like that that adults could go to (some fucking horribly expensive) and one was this place: http://sweetgrassdairy.com/ in Thomasville, GA. $120 for 5 hours of learning to make cheese.
